Jerusalem artichokes are not from Jerusalem and neither are they artichokes. The Japanese name is kikuimo but they’re not a potato either. What they ARE is a nutty, crunchy, yummy and pretty healthy. There are claims that they have prebiotic qualities, help with blood glucose levels, digestion, cholesterol, blood pressure and boost the immune system. I don’t know, that seems a lot for one little tuber to do but who knows!
These are grown without any chemicals and cleaned as much as possible without damaging the tuber but are sent with some soil attached. They store well in a cool, dark place.
