Haru yutaka variety wheat produces a high gluten bread/ pizza flour. Grown completely chemically free from 4th generation seeds we saved ourselves. Sun-dried and professionally milled.
While this is a ‘strong’ flour I use it for everything- cakes, pancakes, scones with no problems. I wouldn’t recommend it for a chiffon cake or sponge though.
This is the same flour we sell as wholemeal just professionally milled to white.
